Xmas stout

Boiled 10l water - put in fermenter
Boiled 10l water; heat off; added:
  • Black Rock Unhopped Dark Malt Extract - Typical Analysis: 42 +/-6 EBC (Colour), unhopped (Bitterness) 
  • 1 can Blackrock Miners Stout 
  • 1 can Blackrock Bock 
Stirred; heat to boil
Added ~50g Wakatu 7.3

Hot break in about 5 mins
High heat (not boiling) about 50 mins
Cool through copper tubes

Next day, added Safale S-04

20/12 22oC - 1.064 (~7% potential)
29/12 18oC - 1.028
31/12 19oC - 1.024
8/1/12 18oC - 10.22
13/1/12 19oC - 1.022

Boiled 110g dextrose with 2 cups water.
Siphoned to secondary bucket with sugar water.

Bottled.

Very nice. Meaty and stouty. About right carbonation, very slightly fizzy if anything.
