OK. Second brew was a bit more adventurous. I used malt extract and hops 'n stuff! Ingredients and method:
3kg bavarian pilsner malt extract
15g Nelson Sauvin @ 60 min
(took 30 mins to froth - hot break)
15g Cascade @ 15 min
10g Nelson Sauvin @ 15 min
15g Cascade @ 0 min
15g Nelson Sauvin @ 0 min
4 1/4 oz cane sugar with 2cups water (boiled)
Went from about 1030 to 1012 so would have been about 3%. Kegged and better CO2 than first lot. Couldn't decide if it was nicer warm or cold though. Supposed to be a Mac's Pilsener and tasted a bit like it.
Was OK in the end but the basis for a great beer. There was some leftover malt and hops so made a small batch which ended up using a bit more hops than malt (percentage wise based on original recipe). Added some cinnamon and cloves (boiled then strained) to the final bit. No measurements as was only enough for 9 x 750ml bottles (yes, bottled this time with 'sugar capsule things'). Ended up so nice even Kylie can drink it! Hints of passion fruit (or something). Worth doing again me thinks.
